Transfer all documentation relevant for VMM set-up

At the moment all install and configuration md documents are hosted at: https://git.cicer.de/backdoor-collective/belgiumair/blob/master/doc/setup/

Kindly bundle only the relevant parts for our installation and transfer them here to our own Git. Some inconstitencies are:

• --network and LDP_NETWORK reference "be-irceline-sos" => should be "irceline"?
• all references to GRAFANA_URL should be "export $GRAFANA_URL=http://localhost:3000"
